Heathers Bacon and Egg Pie

 A fantastic recipe from my best mates mum, that you can enjoy hot or cold. I guarantee if you make it as well as she does, you wont be able to only have one slice!

You need - for 4 as a main course

For the base - to fit a 9 - 10 inch dish

200g plain flour
100g butter
a pinch of salt
cold water

For the filling - 

3 eggs, beaten
275ml / 9floz milk (full fat)
1 teaspoon english mustard
100g chopped bacon
50g cheddar cheeses, grated
50g parmesan cheese, grated
pepper

Pre-heat your oven to gas mark 5 / 190 C.

Make the pastry by putting the flour, butter, and salt into a food processor, and 'pulsing' untill it looks like bread crumbs. Add water a tbsp at a time untill ('pulsing' after each one), until the pastry reaches the correct consistency. (non sticky, smooth). 

Roll it out to around 3/4 cm thick, and line the tin with it.

Sprinkle the bacon over the pastry, followed by the cheddar.

Combine the eggs, milk, mustard, and pepper to taste into a bowl, mix well, and pour over the bacon and cheddar.

Sprinkle the parmesan over the top, and bake in the oven for 40 mins.
