Gnocchi

If you don't know, these are funny little mashed potato like things from Italy. My favourite way of eating them is below.

You need - for 2 as a main course
500g freshly boiled potatoes
175g plain flour
1 beaten egg
salt and pepper
butter
parmesan grated

Drain and mash potatoes adding salt and pepper, butter, and parmesan to taste. Fold in the flour and egg, mix to a dough and turn out onto a floured surface.
Now either form into little balls around 2cm in diameter, or roll out into a long cylinder and cut into little sausages (to be honest you can form into any shape you like as long as its not too big, kids love these in novelty shapes, or letters).
Cook by dropping a few at a time into gently boiling salted water, they float when they're done so you cant really 'lunch' the cooking process.

I like them with a simple pesto, for which you need:
3 good handfuls of fresh basil
pine nuts
salt
parmesan grated
olive oil
Throw all of the first 4  ingredients into either a pestle and mortar or blender, turn to a paste and loosen with olive oil. Its that easy. Its also great with pasta.
