Purple Pesto Penne

Just a funkier version of the usuall pesto really. Brilliant colour, fantastic taste, bit of originality, and it's so easy.

You need - for 4 as a main course
4 large handfuls purple basil
1 handful pine nuts
1 handful parmesan
2 cloves of garlic
coarse salt
olive oil
penne (pasta quills)

Boil some salted water in a saucepan and put some pasta on to cook. I like to use Penne because you get three P's in the name, (it also holds the sauce quite well).

Put the basil, garlic, and pine nuts into a pestle and mortar, (or food processor), along with a large pinch of the salt.

-The salt gives flavour, but is also abrasive, so helps grind up the ingredients-.

Grind everything to a paste. Don't worry about getting it really smooth, a few lumps add texture.

Add olive oil gradually to loosen it to the consistency of your preference. Add the parmesan, again adjust the consistency with oil if you want to.

Drain you pasta once ready return it to the pan (off the heat) and mix in your sauce.
