Spag-Bog
...Or
in other words, Bolognese. This like quite a few other
people was one of my childhood favorites, and spag-bog
is what it was called in our house.
You
need - for 3-4 as a main course:
1 onion finely chopped
500g minced lean beef and pork
1 tbsp tomato puree
2/3 pint skinned chopped tomatoes
1/2 glass of white wine
salt and pepper
olive oil
Traditionally in the Emila Romagna region of Italy that's
it. But I like to add :
some chopped celery
and a handful of herbs, parsley, basil.
In
a large pan fry the onion (and celery) in olive oil until
slightly coloured, add the beef, then the pork,
and brown.
Stir in the tomato puree and season. Add the chopped tomatoes
and white wine. Turn down the heat simmer for at
least 2 hours, stirring occasionally. (add the herbs)
Serve with spaghetti noodles and a little parmesan.
