Roast
Dinner Soup
This
is quite a heavy soup, but I would still class it as a
light meal. It's a really good way of using up your
roast dinner left overs, and it stretches them out
further.
You
need:
1 roast dinner left overs, including gravy, stuffing and
everything
stock
olive oil
salt and pepper
Put
a little oil in a large pan and add your roast left overs.
Cook for a few minutes add the gravy, and as much stock
as it takes to cover the ingredients in the pan. Simmer
for 10 mins then blend. Season to taste and you've just
made what's probably the easiest soup in the world. Serve
with croutons (see below) and cheese.
Croutons
Croutons
are basically small bits of toast. You can do that as a
quick fix, but here's some real tasty ones.
You
need:
bread cut into 2cm cubes
garlic
herbs of your choice chopped
olive oil
salt and pepper
Pour
about 5 tablespoons of oil into a bowl add the herbs and
seasoning. Coat thoroughly and leave to soak for a few
minutes.
Next place in an ovenproof dish and put into a pre
heated oven at 200°c until crispy, 5-10 mins, or toast
in a hot pan.
