Mmm
This
name means, mushroom and mozzarella melt. It probably
works better with a combination of cheeses, but I like
the funky and fitting abbreviation.
You
need - for1 as a main course
4 large mushrooms field or Portobello are ideal
fresh thyme
mozzarella
butter
salt and pepper
Remove
the stalks from all 4 mushrooms. Butter the gilled side
of 2, and put them on a baking tray, skin side down.
Place the thyme into the cavities that the stalks
have left. Slice or grate the mozzarella and top the
mushrooms with it. 'Stud' the skin side of the other two
mushrooms with some thyme (stick it in), and butter.
Place 1 on top of each of the other two
mushrooms, creating a sandwich effect, season, and put
the whole shebang into a pre-heated hot oven for around
8 mins. By this time the mushrooms should be cooked to
perfection, and the mozzarella all melted and gooey.
