Broccoli
and Cumin Soup
This
is a fairly new recipe of mine, that I invented when our
food supplies were on the
diminished side, and it turned out rather well.
You
need - for 6 medium bowls
1 large onion chopped
2 sticks of celery chopped
1 large clove of garlic chopped
1 head of broccoli divided into florets (the natural
little tree shapes)
salt and pepper
ground cumin
2 pints of vegetable stock fresh or from a cube
handful of parsley
In
a large pan fry the onion and celery in a little oil until
just beginning to colour, season. Add the garlic
and broccoli, mix together and then cover with the most
of the stock, ( retain some, so if you need to, you can
adjust the consistency later). Bring to the boil, cover
and simmer on a reduced heat, for around 15 minutes by
which time everything should be really soft.
Turn off the heat add the parsley, 1 tsp of cumin and
blend.
Perfect to serve with grated cheddar cheese and my brown
rolls.
