Pretzels

These aren't like the little crispy ones you can get, they are much softer, and bigger. They are good for snacks and taking on picnics.

You need - for 8-10:
250 ml warm water
a pinch of sugar
2 tsp of salt
375g plain flour
9g easy blend yeast

Combine all the ingredients in a bowl. Knead for 10 mins after which the dough should feel quite springy. Return the dough o the bowl and cover. Leave in a warm place to double in size, the time it takes will depend on how warm it is.45 mins -1 hr at room temp.

Meanwhile put a large pan of water on to boil. And pre heat the oven to 190°c.
Once risen roll it out into 30-40 cm 'sausages' twist into pretzel shape. Submerge  each in the boiling water for 30 seconds or so, sprinkle with sea salt and transfer to a baking tray and cook for 12-15 mins. They should be almost underdone in the very centre.
